3and 1/2 tablespoons sugar(I used pure cane sugar)
1/4teaspoonbaking soda
2teaspoonsbaking powder
2eggs
1and 1/2 cup buttermilk
1cupricotta cheese
1teaspoonpure vanilla extract
4tablespoonsunsalted butter(melted)
1cupblueberries(fresh or frozen)
Additional fresh blueberries for garnish(optional)
Instructions
Mix the flour, sugar, baking soda, baking powder together set aside.
Mix together the buttermilk, ricotta cheese, vanilla, and eggs set aside.
Now mix together the dry mixture and wet mixture just until blended.
Add the melted butter to the mixture. Blend the mixture just until blended.
Gently fold (mix) the blueberries into the waffle mixture.
Cook waffles according to your waffle maker's instructions.

Can They Be Reheated?These can definitely be reheated. I recommend freezing them if you are not eating them immediately for best reheating results.Can They Be Frozen? Freezer TipsTo retain their shape as much as possible, place them in the freezer right after cooking them. I usually place the pan in the freezer for about 10 minutes with the waffles spread out evenly to help them retain their shape.Then you can wrap them individually with foil, then place them in a freezer food storage bag or freezer friendly container that has a cover. This prevents them from sticking together in the freezer and allows you to do easy reheating straight from the freezer to the oven. They can stay in the freezer for up to three months.Reheating TipsWhen reheating, place the wrapped waffle on a baking sheet, open the foil and place the pan in a preheated 350 degrees oven. Heat for about five minutes they are until heated through.For More SweetnessAdd an extra ½ tablespoon to make them slightly sweeter. I personally do not like to add more sugar than what they recipe calls for because the syrup adds more sweetness.Using Frozen BlueberriesIf using frozen fruit, don't let the frozen fruit thaw. The thawed fruit will stain the batter.Avoid Overmixing BatterDo not overmix the batter. Mix the batter just until all the ingredients are incorporated.
