Why Homemade Creamy Alfredo Sauce?
This Alfredo sauce is a household favorite in my home.
My hubby and kiddo are always circling around me like vultures while I’m cooking this sauce.
Parmesan Steals the Show
This divine creamy white sauce has hints of nutmeg and dry white wine that is not over the top, but helps to create a unique flavor.
But the main star of this show is freshly grated Parmesan that you can taste in every bite.
My Secret to Creamy Alfredo Sauce Made at Home
Some have problems with the cheese melting efficiently in the sauce. My secret to making this sauce smooth and creamy, without losing any flavor is the use of a hand held blender to mix all the ingredients together, as well as freshly grated Parmesan cheese.
For some reason I noticed that pre-shredded cheese doesn’t blend as well as freshly grated cheeses. I believe this has something to do with the pre-shredded cheeses having some type of coating on it.
Once you blend the sauce at the end, you get this smooth, creamy sauce. It also thickens as it sits.
Cooking Tips
- To prevent over salting this dish, wait to add salt until after you have added the parmesan cheese because the cheese has a salt content.
- Cooking the shrimp separately helps to keep the sauce thick prior to serving.
- Today I share with you my steps to make this dish with shrimp. You can make this dish with any type of meat you desire.
Easy Cooking Tip
- To eliminate extra steps during the cooking process, after the cream sauce is fully cooked, you can add the shrimp to the cream sauce and cook the shrimp and cream for 3-4 minutes. Then allow the sauce to sit for about 2-3 minutes before serving. This will allow the cream to slightly thicken again before serving.

- Garnish this pasta dish with crumbled bacon pieces to give it that extra kick and flavor!

Homemade Creamy Alfredo Sauce
Ingredients
For Sauce:
- 7 garlic cloves finely chopped and divided in half
- 1 tablespoon olive oil
- 1 tablespoon butter
- 32 oz heavy cream
- ¼ teaspoon nutmeg
- ½ teaspoon white pepper
- ½ teaspoon garlic powder
- 1.5 cups fresh shredded parmesan cheese
- Kosher salt to taste
- 2 tablespoons of dry white wine optional
- Fresh finely chopped parsley or dried parsley (optional for garnish)
For Shrimp:
- 1 tablespoon olive oil
- 1 tablespoon butter
- One pound of large shrimp (peeled, cleaned, dried)
Instructions
- Directions for making the sauce:
- Heat the olive oil and butter in a large saucepan on medium heat until the butter is melted.
- Turn the heat down to medium low heat (this will prevent the garlic from browning or burning). Add half of the chopped garlic to the saucepan, and cook the garlic for about one minute.
- Then, add the heavy cream to the saucepan.
- Next, using a whisk stir the nutmeg, white pepper, and garlic powder into the heavy cream mixture.
- Cook the sauce mixture on medium heat for about 10 to 12 minutes until the mixture has reduced in half the amount. While the sauce cooks, make sure to stir the sauce frequently.
- Turn the heat off, and stir the shredded parmesan cheese and the rest of the chopped garlic into the cream mixture. At this point use a hand held blender to blend the mixture into a smooth creamy sauce.
- Next, salt the cream mixture to taste with kosher salt.
- Stir in the optional two tablespoons of dry white wine into the cream sauce. Set cream sauce aside.
- Directions for cooking the shrimp:
- In a medium to large pan, heat the olive oil and butter in a large saucepan until the butter has melted.
- Add the shrimp to the pan and cook shrimp for 3 to 4 minutes.
- Make sure to stir the shrimp half way through the cooking time to ensure proper cooking of the shrimp.
- After the shrimp has cooked, use a slotted spoon to add the shrimp to the white sauce. Gently stir the shrimp into the sauce.
- Serve over your favorite cooked pasta.
- Top each dish of pasta and sauce with the chopped parsley garnish.
