Duck Fat Roasted Garlic Herb Potatoes

  • 1.5 pounds baby potatoes (For this recipe I used Baby Dutch Yellow Potatoes)
  • 4 sprigs of Fresh Rosemary finely chopped
  • 9 garlic cloves finely chopped or pressed
  • 1 tablespoon Dried Oregano
  • 1/8 cup duck fat melted or 1/8 cup olive oil
  • 1 and 1/2 teaspoons Kosher salt
  • Fresh Cracked Black Pepper


  • Preheat oven at 425 degrees.
  • Boil potatoes in a pot of boiling water for about 7 minutes. After boiling the potatoes, drain the potatoes.
  • Mix the rosemary, garlic, oregano, and duck fat together. Pour this mixture over the potatoes.
  • Place the potatoes on a baking pan lined with foil for easy clean up.
  • Sprinkle the salt over the potatoes. Then sprinkle fresh cracked black pepper over the potatoes as well.
  • Back the potatoes for about 20 to 25 minutes.
