If you love creamy pasta sauces but want something a little different than the usual Alfredo, this Havarti Cheese Pasta Sauce is worth trying. This is a smooth, silky sauce that’s rich without being overpowering. This is made with simple ingredients including garlic, cream, white wine and garlic, and minimal effort.
This sauce has become one of my go to ways to make a creamy pasta without overthinking it, because this reliable cheese sauce comes together fast, consistently delivering a smooth result. These tips and the recipe will ensure you achieve a perfect cheese sauce every time.
HAVARTI VS. ALFREDO SAUCE – WHAT’S THE DIFFERENCE?
While both sauces are creamy and comforting, Havarti sauce and classic Alfredo have different flavor profiles. Traditional Alfredo leans heavily on butter, cream, and Parmesan for a rich, sharp finish. In this recipe, Havarti is the star, with a small amount of butter and Parmesan used to support the sauce rather than dominate it.
The result is a smoother, milder cheese sauce with a velvety texture. If you enjoy creamy pasta dishes but want something a little lighter and more delicate than a Parmesan forward Alfredo, Havarti is a great alternative.
TIPS FOR THE CREAMIEST HAVARTI PASTA SAUCE
A smooth cheese sauce comes down to technique, not complicated ingredients. These simple tips help ensure your Havarti sauce turns out creamy every time. You can find the full recipe below!
Use Low Heat
Cheese sauces don’t like high heat. Keep the sauce over gentle heat and remove it from the burner before adding the Havarti to prevent separation or grainy texture.
Add the Cheese Gradually
Stir in the Havarti a little at a time, allowing each addition to melt fully before adding more. This helps the cheese incorporate smoothly and prevents clumping.
Adjust the Texture as Needed
If the sauce thickens too much, loosen it with:
- A splash of milk or cream
- Reserved pasta water for extra silkiness
The goal is a sauce that coats the pasta evenly without feeling heavy.
Pro Tip – For an extra layer of flavor, add ½ to 1 teaspoon of truffle oil at the very end, tasting as you go. A good truffle oil is strong, so a little goes a long way.
SERVING SUGGESTIONS
This sauce pairs well with a variety of add ins and sides, making it easy to customize.
- Short pasta shapes like penne, rotini, or shells work best with this sauce because they hold the sauce well.
- Toss in some chicken or shrimp for extra protein, and you’ve got a full meal!
- Roasted vegetables such as broccoli or asparagus are great side dishes.
FAQs
Yes, Havarti cheese melts very well, making it an excellent choice for creamy pasta sauces. Its semi soft texture and higher moisture content allow it to melt smoothly without becoming grainy or oily when heated gently.
Havarti is ideal for creamy cheese sauces because it melts evenly and has a mild, buttery flavor. It creates a smooth, cohesive sauce that coats pasta well without overpowering other ingredients.
If the sauce still looks slightly grainy after using low heat and removing it from direct heat, blending it briefly with a handheld blender can help. This encourages the melted cheese and liquid to fully emulsify, resulting in a smoother, creamier sauce.

Creamy Havarti Cheese Pasta Sauce Recipe
Ingredients
- 2 tablespoons unsalted butter
- 1/2 tablespoon extra virgin olive oil
- 10 large garlic cloves finally chopped
- 2 and 1/2 cups of half and half
- 1/4 cup dry white wine
- 8 ounces creamy Havarti cheese diced
- 1/2 cup shredded Parmesan cheese
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon black truffle oil (Optional)
Instructions
- Heat a large sauce pan using medium heat. Once the sauce pan is hot, add the butter and olive oil.
- Once the olive oil and butter becomes hot (this should only take a few seconds to get the oil and butter hot), add the garlic to the pan.
- Cook the garlic for few seconds. Then, add the half and half, dry white white, and onion powder to the sauce. Then stir the sauce.
- Turn the heat down to medium low heat and let the sauce cook for about 5 minutes or until slightly thickened. As the sauce cooks, stir the sauce occasionally.
- After the sauce has cooked, turn the heat off, add the cheeses to the sauce, and stir the sauce until the cheese has melted and blended into the sauce. (At this time you can add the optional truffle oil).
- If sauce is still grainy, use a hand held blender to blend the sauce so that the sauce is creamy as it helps the cheeses to blend well.
- Salt and pepper the sauce to taste.
- Serve with your favorite pasta.

Can you add marinara or something similar to make it a pink sauce?
You add marinara for a more tomato base sauce. Start with a small amount of tomato sauce to taste and add more to taste would be my suggestion. Happy cooking!
